Bunspice is used in Bread making for one purpose only and that is the flavour. Bunspice can have an effect on the yeast and therefore must be used with care. The more bunspice you put in the slower the dough will raise. Bunspice such as pumpkin spice, hot cross spice, lemon spice etc.
Malt powder
The Malt powder that is used in Bread making is non-diastatic (not enzyme active) and is used for flavour and colour. It will also slow take longer time for the bread to rise.
